Caprese Salad Skewers

These fresh and delicious Caprese Salad Skewers are a perfect appetizer. The tomatoes are high in the antioxidants lycopene, vitamin A, vitamin C, and betacarotene. These are important for vision, lowering your risk of developing cataracts and slowing the progression of age-related macular degeneration. Basil is a leafy green, high in antioxidants, vitamin K, and zinc. Bocconcini cheese is a good source of protein, naturally lower in fat than most cheeses, and has almost no salt.

Caprese Salad Skewers

  • 18-24 plain/unflavoured toothpicks
  • 18-24 grape or cherry tomatoes (about 1 pint)
  • 18-24 light bocconcini cheese (fresh mozzarella) balls (~200g container)
  • 12-24 basil leaves

Balsamic Vinaigrette

  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • ½ tsp grainy mustard
  • ½ tsp honey
  • Pinch of salt - as little as you can enjoy!
  • Pinch of freshly ground pepper

Method

  1. Slice the tomatoes and bocconcini cheese balls in half.
  2. Tear basil into pieces a little bigger than the circumference of the bocconcini you are using or simply fold leaves in half.
  3. Thread half a grape tomato on a toothpick followed by half a bocconcini, then a piece of basil, half a bocconcini, and finally half a tomato (or another pattern of your choosing). Place on a platter.
  4. Combine ingredients for balsamic vinaigrette into a jar or other container than can be sealed. Shake well.
  5. Drizzle the Caprese Salad Skewers with the Balsamic Vinaigrette. Serve and enjoy!
